1 cup cracked wheat 
2 Tbsp. oil    
2 leeks,trimmed and chopped
1 clove garlic,finely chopped
1 pound mushrooms,sliced
2 1/2 chicken broth
2 Tbsp. chopped parsley    
1/8   tsp.each salt and pepper
1/4 cup shredded Cheddar cheese
In a large nonstick skillet, heat oil over moderate heat.  Saute'  leeks and garlic,stirring frequently,5 or 6 minutes or untill browned.  Add mushrooms and cook 4 to 5 minutes.  Stir in broth.

Bring to boil; add wheat and stir well to combine.  Return to a boil, cover,and gently simmer, stirring frequently, about 20 minutes or until the wheat is tender and the liquid is absorbed.

Preheat broiler.  Stir in parsley,salt,and pepper. Transfer to an 8"x 8"x 2" baking dish, sprinkle with cheese, and broil about 3 minutes or until well browned.  Serves 8.
