1/4 cup plus 1 Tbsp. tahini
2 1/2 cups garbanzos, cooked and drained
Juice of 1 lemon
2 1/2 Tbsp. olive oil 
2 1/2 Tbsp. warm water
3 cloves garlic 
1/2 tsp. salt 
Pepper to taste
Put everything in the food processor---whirl to blend thoroughly; scrape down sides of  bowl as needed.  Add more lemon juice if you think it needs it.  It should  be a thick dip. 

Makes 2 cups.
